From The Epicurean Corner: I was craving for some qucik spicy fried foods. We went to the In-N-Out Burger & ordered Grilled Cheese Sandwich & Fries. I wasnt aware that they use the highest grade potatoes,cut them right in the store, and cook them in 100% pure, cholesterol-free vegetable oil. I will try not visiting Mc D's any more!
Then yesterday, Tweetu suggested, why not make 'Tikhat-mithachi Puri'(fried spicy tortilla made from whole wheat flour ). This is a classic Maharashtrian snack, much like Gujrathi 'Mathari' or Bengali 'Luchi'.
Heres how they turned out... we even had some with ginger infused Tea!! Yuuummmm! They are very easy to make...the recipe is as follows:
2-4 cups Atta (Indian-style whole-wheat flour), salt to taste,1-2 tblsp chilli powder-or as you prefer, some cumin seeds, 1 tsp turmeric, 1 tsp ground cinnamon & oil for deep frying.

Method: Mix all the ingredients in a large bowl. Add warm water little by little to make a smooth but *firm* dough (firmer than regular roti dough). Let the dough relax for 30 minutes under a barely-damp towel in the covered bowl. Then take about a tablespoon of dough at a time, roll them into even small circles (using some more atta to help in the rolling process), and deep fry for a few seconds on each side until the puri is puffed and golden. Drain well on some paper towels and serve hot. Thats it!
